This is like my FAVORITE cake of all time!! It is really, really REALLY GOOD!! Here is the entire recipe:
Italian Cream Cake
1 stick margarine
½ cup shortening
2 cups sugar
5 egg yolks
2 cups flour
1 tsp soda
1 cup buttermilk
1 tsp vanilla extract
1 pkg coconut
1 cup chopped nuts
5 egg whites, stiffly beaten
Cream sugar, margarine, and
shortening; add sugar and beat
until mixture is smooth. Add egg
yolks and beat well. Combine flour
and soda; add creamed mixture
alternately with buttermilk. Stir in
vanilla extract. Add coconut and
nuts. Fold in egg whites. Pour batter
into 3 greased and floured 8 inch pans.
Bake at 350 degrees for 25 minutes.
Frosting:
8 oz cream cheese, softened
1 stick margarine
1 lb powdered sugar
1 tsp vanilla
1 cup chopped nuts
Beat cream cheese and margarine
until smooth; add sugar and mix well.
Add vanilla; beat until smooth.
Stir in pecans. Spread on cool cake

Oh man -- not another yummie one!! Gotta save this one also; but mainly because I just love how you did your design. Who would have thought that I would like those prints together, but it is very, very fun!!
