these are the great recipe cards Nancy sent me for Dec. when our theme was breakfast recipes. ummmy, ummmy, enchilada breakfast casserole...boy was it good too... I took it to a ladies prayer brunch and got rave reviews...I'll print the recipe below since no matter how I photographed it, couldn't read it..
the card has one of my new fav sayings; "Life isn't about waiting for the storm to pass; it's about learning to dance in the rain"...Oh, I love that...and she sent some great ribbon which has already found it's way onto cards....
Breakfast Enchiladas
1 lb. Jimmy Dean Hot or Maple Flavored Sausage, cooked and drained
1 cup shredded cheddar cheese
8, 12 inch flour tortillas
1/2 cup milk
8 eggs
salt, pepper, and tabasco to taste
Preheat oven to 375. Place some sausage and cheese inside each flour tortilla and roll up (I added leftover hashbrowns too) Save some cheese for the top (1/4 cup)
Place in a 9x11 baking dish that has been sprayed with nonstick spray. Stir eggs and milk together with salt, pepper and tabasco. (I added a small can of diced chilis). Pour the mixture over the tortillas. cover dish with foil; bake at 375 for 40 minutes. Remove foil and put remaining cheese on top - bake 5-10 more minutes. Check periodically to ensure you don't over-cook (done when the eggs have set)
