Nestabilities are metal dies that can cut or emboss, but you need a die-cutting machine to make them work (wizard, cuttlebug, big shot, big kick, etc.)
Coluzzle is a cutting system that utilizes a swivel knife, special cutting mat and plastic templates with laser-cut channels that help guide your knife while you cut the shapes. You can also get a scoring tool that works with the templates.
With the nesties, you cut out the whole shape at once. With the coluzzle, you end up with webs on the edges that you need to snip with scissors. With the coluzzle, though, it's very easy to align the template over whatever you are cutting to make sure the image is centered. It's also more portable than a die-cutting machine, and less expensive. Some people, though, have a lot of trouble getting the hang of how to let the template guide the knife for them; and if you try to force the knife where you think it should go, you end up with nicked templates.
