You should store your paper flat. That way it won't get any damage to the edges and it also will not ripple or bend in the middle. Away from heat/cool.
I store mine in a 4 drawer rolling cart. I have 4 of them. One drawer for each color family and misc.
I store all 8 1/2 X 11 in a filing cabnet with a drawer for each family. Smaller scraps (if I keep them) are in a box beside my desk, and once in a while I will sort them into ziploc baggies by color and keep the ziplocs in a shoebox.
12 X 12 cardstock and papers are all stored flat in a set of the cube structures that I have modified to have closer shelves (using the little plastic ties).
I put mine in clear plastic magazine bins. I have the color families grouped together and I can grab what I need at a glance. I've done it this way for years and it works well for me!
I have a rolling cart for hanging folders. I may be a heretic, but I don't have my cs divided into families. I have all the blues together, all the greens together, etc., alphabetized by name within each color.
I just got a plastic hanging file box (made by rubermaid) that has a handle and hinged lid at an office supply store. I'm also going to label each hanging file with the paper colour and put scraps in a ziplock with the propper colour. I can take my paper with me to scrap sessions. Easily protable and they fit all my 8 1/2 X 11 paper. I use up this size of paper so fast that I don't knowtice it getting damaged from not laying flat.
For 12 X12 paper I'm using the SU 12 x12 paper holders but I would rather have something that they can lay flat in.

I store my paper a combination of ways.
I have a 12X12 hanging file folder system I bought at The Container Store. Since I have so much paper, I organized that by shade and put the name on each file folder. This holds my blues, greens, and fall colors. The ones I use the most. The file is next to one of my tables.
I also have a stand up crate system I think. My friend gave it to me. That I use for my other colors I use less often. I like it as I can see what colors I have.
I have a lot of paper packs and DP. Those I store face down in clear containers by designer. Specialty papers (linens, velum, etc) go in another clear container easily marked.
Paper scraps go into either plastic bags in a plastic container or clear containers organized by occasion.
If you haven't figured it out yet, I am a paper addict. Fortunately, I have a wall to wall closet that keeps a lot of everything organized. Even though it is organized, it's scary when it is opened as the amount of inventory of everything I have, you would think I was a demonstrator.
Too cool!!!! I have seen something like that at office stores -- not as fancy and cool as yours. But if you check office sites, you may be able to find something along the same idea.
I'm now totally rethinking how I store mine -- in plastic folders and in a cube/cubby system. This is much easier to see all the color and easy to get too.
