Was it obvious whether it was a card front (separate piece stuck onto a folded base) or a one layer creation?
If the former, then you just want to emboss the piece of cardstock, placing your top plate in line with where you want the texture to stop. You'll only get embossing where there's pressure so you can run the sandwich right through and the end of the plate will act as the end point for the embossing. Then just score with whatever tool you have, stamp your sentiment and stick the whole thing to your folded base.
If the latter, it's going to be a bit more complicated but should be doable with a folder you can use sideways. Shout if you want some ideas to do it this way, it's getting late on this side of the Pond so it's probably better if I try explaining after a sleep! (or somebody may come alive no with a better idea in the meantime)
I wondered if it was done that way. I was thinking it would leave a groove if I didn't emboss all the way to the edge of the card stock.

I've done this like Angelnorth explained. If there is a slight groove where the folder ends, that's where you make your scored line, and it covers it up.
It was a while back that I did this, but I think I used my swiss dots CB folder and ran it through sideways and put the scored lines underneath. There are several CB folders that you can run the design sideways and it looks good.

Yes, as Bugga says, the scored line will disguise it if you do end up with a groove. I find that using the top plate to define the end point of the embossing usually gives a clean result though.

You can also avoid a harsh line if you don't roll the folder all the way through. If the rollers don't go over the edge, you won't get a line.
Angelnorth has a great suggestion about lining up the edge of your plate with the edge of the folder.
You could always disguise a line with ribbon- I had this happen to me on a triple stamping card i was doing, and didn't want to dump it.
I wonder if you put some chipboard on the edge inside the embossing folder, if that with prevent the line. Have not tried this but it is worth a look see.
The only part I do a tiny bit differently is with the ScorPal I tend to slide CS down a tiny bit whenever I score in order to get the score line all the way to the edge. (When possible I butt the CS against the left ridge so it's straight.) Gina K. does it in two steps. I am lazy so combine.
