Are there instructions available for a larger version of the Mini Wrap Journal? I would like to make one that is closer to the 8"x5" (+/-) standard size.

You can make this journal any size you like...
1. Determin the finished size desired.
2. Add 1-1/4" to ONE side of each piece of cover paper or cardstock.
3. Trim the inside piece of cardstock to measure the size of the desired journal.
The issue with making a larger Wrap Journal like the one in my tutorial is the FILLER PAGES. The size I show in the tutorial is perfect for regular typing paper or regular notebook paper (8-1/2" x 11") to be folded in half and inserted through the wrapped twine. There typically is not regular paper large enough to be folded and inserted into a Wrap Journal measuring 8-1/2" x 11". But I am intrigued by your desired to create one 😃! So as soon as you do, please share because I know it will be wonderful!!!
For the filler pages, you would need to double the width of your finished size and subtract 1/2", and subtract 1/2" from the height... so for a 5.5" x 8.5" finished journal, your filler papers would be 10-1/2" x 8".
