Hey group, I have had unexpected car trouble, I won't be able to drive up on Saturday. But I have all of my card kits done, would I be able to mail them so you can all still do them? PM me the address of where you want me to mail them. I apologize for this, my husband had someone run into him and so since he was using my car, I have no car now. oh well, maybe I can get it fixed soon. The insurance is suppose to pay for it but... we all know how fast insurance company's get things done. So let me know where I can mail them. Sorry.

I'm afraid that I have to pull out, too! :( So bummed. We just found out that my hubby has to leave for 2 weeks starting Sunday, and we have a ton of stuff to get done before then.

It was lovely meeting all of you, and I really enjoyed the projects. But I think I left my purse at the clubhouse. I was hoping someone saw it and grabbed it.

Here is the recipe for the Crock Pot Chicken Enchilada Casserole
3 Chicken Breasts, cooked and cubed
1 cup sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
1 tsp. salt
1/2 tsp. pepper
1 small can green chillies
6-8 corn tortillas torn into piecess
1 1/2 cup grated cheese
Mix chicken, soups, salt, pepper and chilies together. Put a layer of tortillas in bottom of greased crockpot. Layer sauce with remaining tortilla pieces. Cook 4-5 hours on low heat. Top with cheese and let melt.
Yesterday, I used tortilla chips instead of tortillas so I omitted the salt and added about 3/4 cup of chicken broth to give it a bit more liquid to compensate for the dry chips. I also added a bit of onion powder and garlic salt.
