AWESOME swap, Suzy! It's such a blast to stamp and eat--but it's really the stampers that make it a blast. Y'all are such a delight to spend the day with.

Some of y'all asked for my Mississippi Mud Cake/Rocky Road Brownies recipe. Okay, it's not actually mine...it's Southern Living's. It's ridiculously easy too. And fast. And, you can hand mix it easily (and that's coming from the girl that doesn't hand mix things). I'm writing the directions as they state in the book and then putting my variations below (as I always change recipes). Here it is:
Cake:
1 cup butter, melted
2 cups sugar
1/2 cup unsweetened cocoa
4 large eggs, lightly beaten
1 tsp. vanilla extract
1/8 tsp. salt
1 1/2 cups AP flour
1 1/2 cups coarsely chopped pecans, toasted
1 10.5 oz. bag mini marshmallows
Chocolate Frosting
Whisk together first 6 ingredients in large bowl. Stir in flour and chopped pecans. Pour batter into a greased and floured 15x10 inch jelly-roll pan.
Bake at 350 F for 20-25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven, top warm cake evenly with marshmallows. Return to oven, and bake 5 minutes. Drizzle Chocolate Frosting over warm cake. Cool Completely.
Note: Substitute 2 (19.5 ox) packages brownie mix, prepared according to directions, for first 7 ingredients, if desired. Stir in chopped pecans. Bake at 350 F for 30 minutes. Processed with marshmallows and frosting as directed.
Chocolate Frosting:
1 (16 oz) package powdered sugar, sifted
1/2 cup milk
1/4 cup butter, softened
1/3 cup unsweetened cocoa
Beat all ingredients at medium speed with an electric mixer until smooth.
My variations:
I put the frosting on the cake as soon as it comes out of the oven. The heat helps it spread around.
I forgot to toast the pecans. I did toast them the first time I made them and you could hardly tell once they were baked in.
I doubled the frosting. I found it hard to spread over the cake and cover all of it as the marshmallows like to mix in and it's barely enough to go around, so I solved the problem with doubling.
I know this will be extremely shocking to the girls at my table yesterday, but I failed to read the directions fully both times I've made this. Thus, I used a 9x13 pan for baking, which explains why it took 30-35 minutes to cook the cake. I was wondering...
I've also made this with Dutch processed cocoa. I actually like it better with the Dutch processed stuff. It's darker, richer and not so incredibly sweet. I also changed the frosting the first time as I didn't have milk. So, I exchanged the milk for 1/4 cup of melted butter and 1/4 cup of water. It made the frosting much thicker, but was still really good. It also dried harder so you could cut and stack the cake pieces easily for serving (or transport).
I use vanilla paste, rather than vanilla extract. And, probably more than a teaspoon. I don't measure. Shocker. I am also a vanilla-a-holic so if you don't like vanilla much, you should probably measure.
I don't sift the confectioner's sugar. Who does? Plus, I never noticed it said that until I read the recipe to write it here.

Yep, you're right! She kept eating them in front of us and going on about how GOOD they were, we just had to try them, etc...but I have to forgive her because she was such a sweetheart, and helped this slowpoke get finished!

This was my first shoebox swap and it was fun. I really enjoyed the companionship and our table was fun! The door prizes were great (loved the one I won...the sand pail with everything for summer and a castle book to do with all the goodies) and the cards were fabulous. The Farkle one had my whole family talking about it Sunday and thank you fellow stamper for the extra one! Food? Oh my Word! Those cupcakes were a work of art and that red velvet one made me fall off my diet wagon but I can tell you, it was worth every single moist, wonderful crumb. Wish I had another one! And thanks to the guy who brought in the food (sorry, didn't ask who he was) and everyone who participated. I really hope to be able to do it again next year.

I never did find out who contributed the door prize that I won! It contained the SU set Itty Bitty Bits, the three matching punches, and the tiny buttons, as well as two packages of flowers and a large altered paper clip, all in a really sweet tin bucket that will definitely be put to use organizing something in my room. What a great prize! To whom do I owe thanks?

I thought someone said it was papertrey ink, but I couldn't find a picture of it -- if this was your card can you please email me and let me know the name of that stamp... I have to get one!!! It's wasn't my card, but I own the set. It's Papertrey Ink's Everyday Button Bits. It was an adorable card!
