Canvas is a lot of little squares, and is really nice to add texture to a layer, or to distress a little bit, if you don't ink it up thoroughly.
Linen is a lot of VERY SMALL short lines (like linen, huh? ), and is lovely to stamp over a floral stamp--especially a colored image-- to get a tapestry kind of look.
I own both, and couldn't give one up for anything. However, if I did have to choose (like if the only way my kid could get into college or something was through one of these stamps:mrgreen: ), I would pick Linen.
I love them both but if I had to choose, I would probably get Linen. It is more subtle and works well with almost anything. Canvas stands out more and gives a bolder, almost rustic look. It makes me think of the screen on a screened door or window.

Once I got Linen, I seldom used Canvas anymore. Linen is one of my best go-to stamps. Often when a card needs "a little something", Linen will fix it right up.

I have them both but I use Linen alot more and I will keep it even though it is retiring because I use it soooo much. My favorite thing to do is to stamp a floral scene and then versamark up Linen (or canvas) and then use clear embossing powder over the entire image and emboss it. It makes it look like an oil painting.
