Sure you can! It's the only way I mail. I put the stamp over the flap just to make sure it stays closed. I always tell myself it might make the postman smile
Since you're an SU! demo you can buy them from yourself - I use the SU ones. But also clearbags and a few other online envelope places sell them.
Just to tag on to what Lydia said, make sure the stamp is on the OUTSIDE so it can be cancelled. Some post offices might charge a bit more to mail them, as well. My mom (Postmaster) said they are supposed to bacuse it can't be machine sorted but I have never had one returned for extra postage or had the post office make me buy extra postage.
I also use the SU! ones 'cuz I get them from myself!

Clearbags also has the clear envelopes with the adhesive on the bag, not the flap.
