I cut most of my 12" x 12" papers down to (1) 5" x 7", (1) 5" x 5", (2) 6" x 6". and (1) 1" x 12". That way I am already over the hesitation to cut into a virgin piece of paper and I have sizes appropriate for the things I tend to make. I figure that, on the rare occasion I need one, I can just go buy a single sheet of 12" x 12" paper.
They are filed in ROYGBIV order within each type - flowers, stripes, etc. Holidays, Christmas and "solids" (like Basic Grey watercolor-y, distressed-looking papers) are in separate bins.
