CarrollAnn, a huge thank you for that recipe. I used to make the regular ones, but now I can't have them. These are easy enough, without having to get all the xanthan gum and other stuff.

Hilda, I haven't tried the Chex Lemon Buddies yet, but I have made the Muddy Buddies, They were so yummy. Just about anything with peanut butter is a hit with me! For dessert I'll have a rice cake, peanut butter and craisins, yum!

To all that need GF, my wonderful Aunt gave me a Cookbook magazine featuring gf recipes that use the gf Bisquick. If only DH and I didn't gain weight!

Camerabuff aka Cherie, I love chocolate covered potato chips, so these crackers sound really good. Now I just need to find GF saltines or the equivalent. I used to eat saltines all the time.

And Cindy(mothermark) this is such a kool idea, but for a gal who has a very busy job too...I can't believe you had time to start something else too..But I have to say too, that it's a terrific idea...
I doesn't take too much time to just start a thread and there is not alot of maintaining of this thread that I have do to......

Cindy, I always have made your coconut candies every year for Christmas! Delicious but I believe the more I took out of the bowl, the amount of dough grew even more!
My recipe to share------"Toffee Crackers"
4 ounces saltine crackers
1 cup butter
1 cup light brown sugar
2 cups chocolate chips(I used less because I did not want as much chocolate)
3/4 cup chopped pecans

1. Preheat oven to 400 degrees
2. Line cookie sheet with foil and place crackers on top to completely cover the pan in a single layer.
3. In a saucepan combine sugar and butter and bring to a boil for 3 minutes.
4. Immediately pour mixture over crackers and spread to cover all crackers.
5. Bake in 400 degree oven for approx. 5 minutes(Br sure to watch so they don't burn)
6. Remove from oven and sprinkle chocolate chips over crackers. Let sit for a few minutes until chips are melted and then spread this over crackers and sprinkle pecans on top.
7. Cool completely then break into pieces. Store in covered comtainer.

hey ladies..I'm sorry about putting my card request in the RAK group..I forgot that it is for members only. Cindy emailed everyone and let them know that it is for members only, and you guy's couldn't get in there. But the sweetheart straightened things out in her email to use. Boy if I want cards sent to someone I better learn how to do it right!!

Hey Everyone I have a friend who is 80 yrs.old and fell down and broke her hip, she is in our local nursing home till she gets better. I was wondering if I could ask of use a favor and send her a card. I have it in the card request RAC too. You can send it to me, in care of her.

I use a simple sugar cookie recipe, and when the cookie are done, I press ONE HERSHEY's CHOCOLATE SQUARE into the warm ( hot ) cookies, and then press a small pc. of pecan ( nuts) into the chocolate square......These cookies are A FAVORITE amongst all my friends, and it's always a hint from them to receive these as gifts. I Have a few friends that we don't exchange Christmas gifts, we exchange a couple dozen cookies !!! So, if 8 friends exchange 2 dozen cookies,( We actually bake THREE (3) Dozen...and give one to our churches for the coffee hours.) each person ends up with 16 dozen cookies for the holidays !

Just a funny story hiere....years ago, to keep my children from going into the freezer and getting into my cookie stash, I would always write on the top of the package " BEEF LIVER and then put a date on it ".....Youi would have thought that after awhile these 4 smart kids of mine would have figured out that I HARDLY served liver at home ( I usually made it for my parents, and took it over to them. Even though I dislike liver, I have been told my recipe for it is AWESOME (yuk...yuk )

Have a great HOLIDAY EVERYONE....and if you want the recipe, you can PM me, or just use your own Sugar Cookie Recipe, and then add the hershey square, and pecan nut meat.

If you like kettle corn you are going to love this recipe. It is mmm mmm good!
It's called Popcorn crunch......the recipe....

About 4 1/2 quarts popped corn or 1/2 cup unpopped corn popped.
1/2 cup butter
1/2 brown sugar
1/4 tsp salt

Instructions:

Preheat over to 350. Pour the popped corn into a large roasting pan. I used a large round metal bowl. Melt the butter in a small saucepan and whisk in the brown sugar until melted.

Pour the sugar mixture over the popcorn and sprinkle with salt.

Mix well with a large spoon until the popcorn is coated. (I used a spatula)

Bake the popcorn for 5 minutes, stir and continue baking 5 additional minutes. Cool for 10 minutes or so before serving. The popcorn will keep well in a covered container......if there is any left, that is. hehe Once you start eating this it is hard to stop. Trust me.

Here is a hint on popping the popcorn that I got from Bailmac, Pam. Put the unpopped corn into a brown lunch bag, staple the top shut and pop in the microwave. Works like a charm.

Yum, popcorn!! It sounds yummy and easy, especially the cooking it in the brown bag! Now I just have to get some old fashioned popcorn and try it!

Not sure if these qualify as cookies or candy, but they're super simple.

Poor Man's Turtles

Small bite-sized pretzels w/salt
Chocolate covered caramels (Rolos work fine)
Pecan halfs (or nut of your choice)

Preheat oven to 275�

Place pretzels on greased cookie sheet or use parchment paper
Place one candy on each pretzel.
Bake for exactly 3 minutes.
Press one pecan half (or nut of choice) into the softened chocolate and let reharden. (Using the parchment make this so much easier as you can slide it onto a cool cookie sheet and then put them in the fridge for 10 minutes or so to harden up)

Heart Mouse Cookies!

This is not my recipe....but one that fellow teapotter Elizabeth (I Love Rubber) shared with us last Christmas. She posted the recipe and picture of these fun cookies in the Show and Tell thread and I am moving it to our cookie thread! Thanks Elizabeth, I actually made these last Christmas! They were fun and pretty easy!

In Elizabeth's Own Words:

Hi all,
I make these amazingly cute cookies that look like little mice. I was waiting until I made a batch so I could take a picture of them. Here is the recipe:

Spicy Mice Cookies
1 cup unsalted butter, room temperature
3/4 c. icing sugar
2 1/4 c. all purpose flour
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/2 tsp sea salt
hand full of natural sliced almonds (ears)
a few chocolate melts or chips to melt for eyes and nose

Preheat oven to 325. Line a baking sheet with parchment. Beat butter and sugar until creamy. In another bowl whisk flours with spices. Gradually add flour mixture to creamed butter and sugar. If it becomes hard to mix everything together finish the blending by hand kneading until you have a smooth dough. Measure out level tablespoons and separate. Take each tablespoon of mixture and toll into a ball then shape the ball so it is elongated and shape one end with a bit of a point (to resemble a mouse shape with a nose shape end. Take two slices of almonds and push them in for ears. line them all up on the baking sheet about an inch apart then bake for about 20 mins. Cool completely. Melt the chocolate (when you melt chocolate if it seizes up or won't go liquid enough melt a small knob of vegetable shortening into it) Dip a skewer or toothpick into the chocolate and dot on the eyes and nose. See the picture.

WOW, where was I when all this was going on---all sound so yummy!
I take pretzels--the little like round or square ones and lay down on cookie sheet.
put 1/2 of one of those square wrapped caramel candies on the pretzel
heat til melty in warm oven and put on a bit of melted choc chips in center
and right on top of this fast--LOL--- before all thickens press a pecan half onto it.
Tastes almost like the cookie they call pecan turtles---had the pretzel version for daughters wedding and was a hit.

There is a sweet older lady at our church and she makes these every year for my birthday. Just without the chocolate because I am not a chocolate eater..I know, I know..don't kick me out of the Tea Potters..hehe I will be getting some of these in just a few weeks.
