Amount of above ingredients will depend of the amount of Potato Salad you
will need for your meal. Peel and cube potatoes to desired size.My family likes
mine in about 1/2" cubes. Bring potatoes to boil and cook until done. At the
same time you can boil your eggs.(add salt to water for easy peeling) Drain
cooked potatoes and allow to fully cool. This is important for appearance of
finished dish. Peel cooked eggs and allow to cool. When cool chop eggs to
desired size. Set aside 1 egg for garnish if desired. Combine fully cooled
cubed potatoes and chopped eggs. Add pickles and onions to suit your taste.
(Granny uses a lot of pickles) Add salt and pepper to taste before adding
mayo and mustard.(Granny also uses lots of mayo) Add mayo and mustard to
your desired consistancy and families taste. Garnish top if desired with sliced
egg and lightly salt and pepper the top of garnished dish. Enjoy.
