Probably a medium gray but I think my actual choice would depend on the image/theme (like blue for snowflakes, red or pink for flowers, etc.) I think stamping in silver (or Versamark and heat embossed with silver EP) is very pretty too.
I typically coordinate my inside sentiment color with something on the front of the card. It helps tie the inside and the outside of the card together!
I always used to stamp in black (like an addiction!) but I am forcing myself to work in other colours.
I tend to choose the colour ink depending on the overall colour scheme for the card. Where appropriate I like to emboss in gold.
I do most all my sentiments on the computer so I can say anything I want, and I do coordinate the colors with the front, but I don't use light colors. On a white card, I would probably do a shade of gray like someone said, or a blue.
I choose a color from the design of the card. If all the colors are light or pastel, then I pick a darker coordinating shade, for example, a monochromatic card with Bashful Blue might have the inside sentiment stamped in Brocade Blue or Night of Navy. I've found that cool colors are easier to read than warm ones, so a red and green card would have the sentiment (either on the front or inside) stamped in green.
