Happy Thursday and welcome to this week's Ways to Use It Challenge, Cookies Anyone? Carla here, as your hostess during Cookie Exchange Week. And you thought we couldn't come up with any more obscure holidays!
The first week of December is the perfect time for Cookie Exchanges and I'm here to help you do it in style! Create a recipe card/tag or just include cookies on your card. And for a bonus, share your favorite cookie recipe when you post to this thread. I'd love to hear about the memories associated with the cookies.
My favorite is from my Grandma. She kept a jar full of these marvelous ginger cookies on the counter. When she opened that jar, the smell of those cookies started us drooling. Grandma had 17 grandchildren and we were the luckiest of them. She lived with us, so I got those cookies on a regular basis. I've got her mixing bowl, it looks like the one in this picture, and I think of her every time I use it.
Soft Ginger Cookies
1 1/2 cups sugar
1 cup molasses
1 cup shortening
2 egg yolks
2 tsp soda in 1 cup thin sour milk or coffee
2 tsp cinnamon
1 Tbsp. ginger
Flour to make a soft dough 4 1/2 - 5 cups
Mix first seven ingredients, add flour to make a soft dough. The dough may be rolled out and cut on floured board (don't roll thin) or it may be spread on a cookie sheet with sides on. Bake at 350. Watch these while baking, check for doneness as you would for a cake.
Ice while still warm with the following icing.
2 cups sugar
1 heaping Tbsp. light corn syrup
5 Tbsp. cold water
2 egg whites
Mix and boil over water in double boiler, beating constantly for 7 minutes or until icing sticks well to beater and holds shape or peaks. To help dry for storage, place in oven that's warm but not turned on.
