I have about 11 different shades of blue ink, but I can't seems to find the right one for creating a soft summer blue sky. Can anyone recommend a good colour choice, SU or otherwise? Thanks.
If you are using SU markers, then yes, they will all be a tad too dark for a summer sky. If you have a blender pen, you can use that to color the sky with your existing colors. Just scribble the marker on a piece of plastic, or a CD case, or something like that. Then touch the blender pen to the color, and starting coloring your sky with that. It will be much lighter than the original color.
You can also do this with a brush dipped in a little water instead of a blender pen.
Or, what I do sometimes for a fast, easy sky, use a sponge dauber, dip in an ink pad, swirl off most of the color on scrap paper, then start sponging your image.

I have a sponge for every colour of ink pad that I use -- I also have the SU spots and they all have a sponge ... I was looking at my sponges the other day and the most used one is bashful blue - I use that colour a lot!
Here's another vote for Bashful Blue. When I sponge, I always dab a little of the ink off on a piece of scrap paper first, then go to my project. You can always add more ink, but can't take it away if it is too dark.
I will also use any of the other 'Regal' blues to add some dimension to the sky.
