I use a brayer to colour the raised parts after embossing. I ink up the brayer, and with a very light hand roll it over the cardstock. I find I don't get as much ink on the upraised parts this way.

Hi! I can't remember whose blog I recently saw this on, but what the crafter did was ink up the background stamp, and then dab the ink off around the edges with a dry baby wipe.
