This recipe is so simple it's almost embarrassing!
Ingredients:
Chicken - about 1 1/2 pounds. I usually use whole pieces rather than bite-sized ones. For the recipe I brought I used 1 pkg of boneless breasts and 1 pkg of boneless thighs
Rice - however much you want. Make it according to the directions on the box. For Saturday's recipe I used 1 small box of Uncle Ben's (9 servings).
1 jar of apricot preserves (the small one)
1 envelope of onion soup mix
1 small bottle Italian dressing
Saute or bake the chicken until done.
Mix the preserves, onion soup mix and dressing together and pour over the chicken. Cook until heated through.
Serve over rice.
When fixing it for a large crowd or for a pot luck, I mix the rice in with the chicken (cut into bite-sized pieces) and keep it warm in a crock pot.

Cindy, Thank you so much for another succesful swap. I had so much fun and got to make another new friend, Michelle, and have fun with Pam and Lynn too. The day was perfect and we all got to do what we love best, STAMP. The cards are wonderful and I really needed some ideas for Christmas cards. I think Lynn and I had a race to see who could go back to the kitchen the most for something else to eat.

Here is the recipe for the Corn and Black Bean Soup that some of you asked for:
Corn & Black Bean Soup
2 cans black beans
1 sm. package of frozen corn
1 jar Tostitos medium salsa
1 can diced tomatoes
Boullion cubes (3 chicken & 2 beef)
8 cups water
(Chicken, beef or vegetable stock can be substituted for last two items.)
Mash 1 can black beans and rinse the other can. Empty into large pot along
with all other ingredients. Heat until corn is cooked and boullion cubes are
dissolved. Add sour cream and/or cheese if desired. Serve with corn chips.

1 stick butter (no substitutions)
8oz block cream cheese
3/4 c. powdered 10X sugar
1/4 tsp vanilla
3 Tbsp brown sugar
1c. mini chocolate chips
Mix all ingredients together in a small bowl and chill at least 2 hours. You can shape the mixture into a ball and roll in nuts, chips or graham cracker crumbs, if desired. Serve with graham cracker shapes (ie. bears, bees, bugs,...) or sticks. Regular graham cracker sections are not sturdy enough to stand up to the thickness of this dip.
Enjoy but beware...once you bring this dip to a function, folks will want you to bring it to every function (which is fine with me since it is so easy and tasty!!)
Does anyone have the "dog food" recipe? I don't see it (but I didn't look very hard either). Thanks so much!
Be happy to - did you guys have some on Saturday? It's very easy to make:
1 box Rice Chex cereal
1 cup creamy peanut butter
1 12-oz. bag semisweet morsels
1 box powdered sugar
Empty cereal into a large bowl (I use my large 26-cup Tupperware bowl.)
In microwave, melt peanut butter and chocolate together for two minutes; remove from microwave and stir until blended. Pour mixture over cereal and coat cereal. (Since the choc/PB is hot, I slip ziploc sandwich baggies on my hand so that I can toss the cereal.) When the cereal is evenly coated, pour entire box of powdered sugar into bowl, and coat mixture again. This time, I do some by hand with another ziplock baggie, and then I put the lid on the bowl and turn the bowl over and around every which way.

Would you all be up for a swap the end of January? Something to beat the winter blahs?? My regular one is in March which I'll still have, but was curious if you guys want to try for January too. It really depends on the weather, so I'd probably have you sign up on the thread and just collect registration at the door for this one. Let me know if there is any interest, and then I'll check with the church.
Thanks for the dog food recipe.....now I just have to remember not to eat the whole bowl myself!! A January swap would be fun. I have a couple friends who would like to come, too. Thanks, Cindy.
I'm still waiting on the church to let me know if the dates I picked are good. With it being close to Christmas, they have a lot going on. I'll post here as soon as I hear something.
The two dates I'm looking at for the upcoming swaps are January 31 and March 7. I just sent church an e-mail again reminding them I need an answer. So if you want, pencil in those dates for now, and I'll post a definite when I get an answer back.
I'm still waiting on an answer from church. The person that used to handle the scheduling is not doing it anymore, so I had to give the pastor a written letter yesterday for the two dates. I've changed the March date to March 28 due to a conflict at church. The two tentative dates are now January 31 and March 28. I will e-mail the pastor tomorrow to follow up about them. If we can't hold them at Faith Fellowship, I'll check with my family church in Owings Mills.
January 31 is a go! Just got confirmation from our pastor. I'll start up a new thread this evening for sign ups. No registration form and pre-payment with this one since the weather could change things. But I'll do sign ups and food stuff, so we know how many to expect. Look for the new thread tonight hopefully.
