I love the cards with little (or big) flourish/swirl motifs as backgrounds or borders or accents in a corner, but which stamp or set is the most versatile or useful? Any recommendations? (Please post a link if possible - thanks.)

Technique Tuesday and Flourishes are high quality photopolymer stamps. Autumn Leaves is cheaper quality clear stamps. Purple Onion Designs is unmounted rubber.
There are also lots of sets that have just ONE flourish (like SU!'s Baroque Motifs), if that's what you're looking for instead.
I like them both. I plan on ordering the Baroque Motifs, I think I could do more with this one. I will probably get the Brocade Basics later on. Have you looked in the gallery, I'm sure that some of these talented ladies and gentlemen have created beautiful things with them.
There are Flourishes and Ribbons on this site. http://www.tuscanrose.com/rubber_stamps.htm***
They are very pretty and probably the ones I want the most.
There are also these new stamps by Cornish Heritage Farms
*** I do have these and they are beautiful.
Thanks for all the suggestions. You guys rock! I'm going to go with the Autumn Leaves "Elegant Fourishes" I think - seems to have a good selection of motifs.

Another vote for Baroque Motifs! First, I bought Rhonna Farrer's Swirls V:I set because it only cost me $10. But honestly, the poly stamp doesn't stamp as clear with classic ink (which is pretty much all I have). Technique Tuesday is a bit better, but not perfect.
So, I broke down and splurged for Baroque Motifs and then Priceless and you CAN'T beat the SU rubber!! With Whisper White paper you get a clean crisp image! The best!
Ya polymer vs rubber to me is no contest too! I am behind the learning curve I guess to get a clean crisp image with a polymer stamp - no matter what company it is from.
My fav this week is called ** from TAC - But if you asked me last week it was ****Curls and Swirls because it has both open and solid images so you can color them in or stamp them in a color.
