Default Ink for handcarved stamps

I first got into stamping by carving my own (from a school rubber!) but gave up when I saw the range of ready made designs. I now think I might have another go using proper carving blocks, but am not sure whether oil based ink pads such as Versafine and Stayzon can be used. Speedball packaging specifically states "for use with water based products" and a seller of Mastercut can't say one way or another. Any ideas?

What a great question! I'm just beginning to explore handcrafted stamp making and hadn't gotten as far as thinking about what inks to use and not use. I wonder if Julie Balzer might be a good resource. I found her on YouTube and love what she does.
