I think hairspray would be a magnet for many unwanted embellishments such as dust, pet hair, lint, etc. Maybe give it a test on a sample project that you wouldn't mind if any of those things got stuck to.
I use hairspray whenever I am dealing with glitter, microbeads, or diamond dust. My friend is in art school and she says its a cheap sealent and lots of art students use it.
I did try to use hairspray on my card, but when I stamped with StazOn afterwards, the image wouldn't stick to the hairspray. So, I would recommend using the acrylic spray instead.
ohhh...and I was going to stamp after I sealed it. Thanks a bunch for all of your help. Looks like I need to get out to Wal-mart after work...oh i hate going for just one thing!!!

While I haven't done a LOT of polished stone, I have never found a need to seal it. I stamp in stazon right on the completed polished stone (on glossy paper)
Yup when I use any METALLIC inks w/ Polished Stone I'll seal it w/ hairspray - never had a problem.
It's true tho that if you try to stamp w/ StazOn ink after sealing w/ hairspray you won't get a very good impression - however Basic Black SU! ink works just dandy over the hairspray.
In fact here's a card I did over 2 years ago that I sealed w/ hairspray (I used the Drunken Chalks technique on it instead of Polished Stone):
