For me, I nearly always give all of the cards away. A few I keep as samples to show to people if they are wanting me to make them some cards. Now and then I'll save one to enter into a contest, but then I always forget there is the contest and then end up sending the card to someone instead. LOL!
I make some cards, I wouldn't say a LOT of cards though. I probably make about 30/month, sometimes more, sometimes less. I rarely will make just one card of a design though. If I have 6 girl birthdays that month to send cards out for, I'll make 2 different designs, 3 of each. Same for guy birthdays. I send cards out for birthdays and major anniversaries (1st, 5th, 10th, 15th, 20th, 25th, 30th, 40th, 50th). I send out quite a few "Just because", "thinking of you/feel better". Then I make cards for Halloween, Thanksgiving. Christmas, Easter, 4th of July. I don't do Valentine's (just can't get into it). Those are all made ahead of time, and different amounts of each. Christmas is my big list (and not really that big, about 60). There is a list of 30 for the other holidays. I also make cards for the church ladies group - general note cards, sympathy, birthday, thinking of you, etc - for them to hand out as needed. Then there are the graduation cards, new baby cards, wedding cards, and engagement cards. When one of my cousins or close friends has a baby, I make their thank-you cards (a set of 50) as their baby shower gift from me. In fact, I need to get started on a set of those for one of my cousins. For their wedding gift, I usually do about 50 thank-you cards for that, and make it match their theme or colors of their wedding. I know 50 isn't enough really but they can supplement with store-bought!
I always make one or two extra of each holiday, in case I need to add someone at the last minute. If they don't get used, I donate them the next year to the church ladies group. I don't really have any cards that I've kept that I made. I take pictures instead, and send them out.
