Gift certificate to a Christian book store is a good idea - pastors can always use it. What about a gift card to a restaurant? Trust me, if he's married both he and his wife will appreciate a night out! (said this pastor's wife!)
I think it just depends on him - what's he like? What are his interests? I'm sure he's received so many spiritual-themed gifts over time (unless he's new) that something to speak to his own personal likes would be really appreciated.
I (and my Mom before me) have had friends over the years who are priests and nuns, so it's easier for me to say this. But if you don't know him really well, think of something you'd give to any man in his age range that you know on a professional or business level.
Our friend and former pastor has moved on to a new church and I send him sets of notecards periodically. The general theme of what he'll like is easy for me - sports, nature, (which I think is immensely appropriate for anyone who is spiritual or religious anyway), hunting . . . but more importantly, I know he wouldn't like anything frou-frou or overdone. So, try to think about his personality.
A pastor can always use thank you notes (at Christmas, our friend needed at least 70, and well before 12/25!). I make some with "thank you," "hello," "greetings," "blessings."
And... unless you are in a really different kind of diocese than we are and there's a cook for the priest(s) (do they do that *anywhere* anymore?!) . . . food. Homemade. Or from a local shop that has something special (I used to pick up extra homemade coney sauce from our butcher and at Easter brought him their frozen biscuits and sausage gravy). You can make up a basket. I also like to send Tastefully Simple which you can order sent to yourself and then package it up nicely. Or a "gift certificate" for a homecooked meal at your home. Or a g.c. for a restaurant!!

P.S. Just realize every reference I made to "pastor" was priesthood in the Roman Catholic sense . . . no offense or tunnel vision meant ~ and I'm too tired to go back and edit myself, but everything applies to a married pastor anyway ! It kinda surprises me that I did it though as just last year my DD attended a Lutheran school and the pastor was always called Pastor, so you'd think my mindset would have been altered a bit by that!!
As a wife to a pastor, please do not give him junk food!!! Pastors get enough of that while visiting and while enjoyable, with a mainly sit-down job, the waistline can be affected ...
Some other ideas ...
• a subscription to a magazine of their choice
• a gift certificate to a bookstore
• blank generic notecards (suitable for anything like thank you's, sympathy, encouragement) are always appreciated for future use (if his wife is not crafty!)
• a really really nice pen with a lid -- no messy shirt pen stains (my hubby loves a good pen)
• a nice tie clip (if your pastor wears a tie)
• gift certificate to a nice restaurant
I'm a pastor's wife, and I can assure you that a gift certificate is the perfect solution. You can give him something he'll use, and you can also make it pretty! I'd suggest a gift certificate to a local Christian bookstore (or online at christianbooks.com) or a nice family restaurant. I hope that helps!
By the way, I think it's wonderful that you're doing something for him on his birthday. I know my husband always enjoys the cards of appreciation he gets on his birthday, even if there's nothing else inside! Encouragement and appreciation go a long way, and they cost nothing.
as another wife of a pastor, they really do have enough magnets, mugs, pens that have "christian-yy" sentiments. I think a gift card to a restaurant is a great and very practical idea. They don't have large salaries, so eating out is a real treat.
